Spicy Chicken with Water Chestnuts

Ingredients:

lb chicken meat

tablespoon cooking wine or sherry

tablespoon soy sauce

cup oil for frying

tablespoon green onion, chopped

tablespoon ginger root, chopped

tablespoon garlic clove, chopped

tablespoon hot chili paste

water chestnuts

tablespoon cooking wine or sherry

tablespoon soy sauce

1 1/2
tablespoons water

teaspoons sugar
-

teaspoon cornstarch

teaspoon white vinegar

Dash
of sesame oil

Dash
of Szechuan peppercorn powder

Method:

Cut
the chicken meat into 1 inch cubes. Add 1/2 tablespoon cooking
wine, 1 tablespoon cornstarch and 1 tablespoon soy sauce and
mix; marinate for 20 minutes.

Before frying, add 1 tablespoon oil and mix so that the cubed
meat will separate easily during frying. Dice water chestnuts.

Mix
1/2 tablespoon cooking wine, 1 tablespoon soy sauce, 1 1/2
tablespoon water, 2 teaspoons sugar, 1 teaspoon cornstarch,
white vinegar, sesame oil, and Szechuan peppercorn powder in a
bowl; and set aside for later use.

Heat
wok then add oil. Stir fry the chicken meat until cooked; remove
and drain.

Remove the oil from wok. Reheat the wok then add 2 tablespoons
oil. Add green onion, ginger root, garlic clove, and hot chili
paste; stir fry until fragrant.

Add
water chestnuts and stir fry to mix; add chicken meat and
mixture from step 3. Turn heat to high; quickly stir fry to mix.
Remove and serve
