Roasting Chicken in Soy Sauce Recipe

Ingredients:

  • 1 whole chicken or chicken legs (about 2 2/3 lbs)

  • 6 cups water

  • 6 tablespoons cooking wine or sherry

  • 1/2 tablespoon salt

  • 4 oz rock sugar or granulated sugar

  • Szechuan peppercorns, star anise, dried orange peel, stick cinnamon, whole cloves, fennel, licorice powder - combined to equal 1/2 oz

  • 3 cups soy sauce

Method:

  1. Place water, cooking wine, salt, rock sugar and peppercorn mixture in a pot. Add 3 cups soy sauce. Cook over low heat for 20 minutes (braising sauce).

  2. Place the chicken in the sauce; spoon braising sauce over the chicken and inside the cavity of the chicken. Cover and simmer for 10 minutes. Turn the chicken over and cook for 10 more minutes. Turn off the heat and let stand for 20 minutes. Remove the chicken from the sauce and let cool.

  3. Brush the surface of the chicken with sesame oil; cut into large bite size pieces; place on a serving plate. Pour some braising sauce over the chicken; serve
