Hot and Spicy Chicken Recipe

Ingredients:

  • 12 oz chicken breast

  • 1/4 green bell pepper

  • 1 spring onion

  • 1 red chili

  • 2 tablespoons red chili paste or red chili sauce

  • 1/2 tablespoon salt

  • 0.5 cup water

  • 1/2 teaspoon cornstarch dissolved in 1 tablespoon water

  • 1/2 teaspoon sesame oil

  • 3 cups cooking oil

Marinade:

  • 1 teaspoon dry sherry

  • 1/4 teaspoon salt

  • 1 teaspoon cornstarch

Method:

  1. Cut the chicken into bit size chunks, and marinade with marinade mixture for 10 minutes

  2. Cut green bell pepper, onion and red chili diagonally into thin slices

  3. Heat wok and cooking oil over medium to low heat. Add chicken and stir fry for 7 minutes, remove and set aside

  4. Heat wok and 1 teaspoon cooking oil over medium heat, stir fry onion until fragrant.

  5. Add in red chili, green pepper, red chili paste, water and chicken, and stir fry for 7 minutes

  6. Add in cornstarch mixture and stir well until sauce thickened

  7. Sprinkle sesame oil

  8. Ready to serve
