Grilled Ham and Chicken Slices

Ingredients:

whole chicken (about 2 2/3 lbs)

tablespoon salt

tablespoon cooking wine or sherry

1
green onion, cut into 6 pieces

slices ginger root
-
20
slices ham (about 4 oz)

1
teaspoon cornstarch dissolved in 2 teaspoons water

Broccoli for garnish

Method:

Rub
the exterior and the cavity of the chicken with salt, cooking
wine, green onion and ginger root and let stand for 1 hour.

Place
the chicken, breast side up, on a heat proof platter. Steam,
over high heat, for 20 minutes. Remove the chicken, retain the
broth.

Allow
the chicken to cool then bone. Cut the chicken meat into pieces
2 inches wide and 1 inch thick

Arrange the ham and pieces of chicken alternately on a serving
plate.

Bring
1 cup chicken broth to boil; salt to taste. Thicken broth with
cornstarch mixture; stir. Pour the thickening on top of the
chicken. Arrange broccoli around the serving platter.
