Crispy Pepper Skin Duckling Recipe

|
Ingredients:

duckling (about 3 1/3 lbs)

3
green onions
-
4
slices ginger root
-
2
tablespoons cooking wine or sherry
-
1 1/2
tablespoon salt
-
1
teaspoon Szechuan peppercorns
-
1
star anise
-
1
tablespoon soy sauce
-
Oil
for frying
-
Dash
of Szechuan peppercorn salt

Method:
-
Combine green onions, ginger root, cooking wine, 1 1/2
tablespoons salt, Szechuan peppercorns and star anise and rub
the mixture on the surface and in the cavity of the duckling.
Marinate for 30 minutes.

Steam
the duckling over high heat for 2 hours, or until soft. Remove.
While the duckling is still hot, rub it with 1 tablespoon soy
sauce

Heat
the wok and then add oil. Deep fry the duckling for 10 minutes
or until golden brown. Remove and cut it into bite size pieces;
place them on a serving plate. Dip into Szechuan peppercorn salt
before eating.
