Crispy Lemon Chicken Recipe

Ingredients:

tablespoons and 1/2 cup cornstarch

cup water

egg yolks

boneless, skinless chicken breasts

cup vegetable oil

tablespoons brown sugar

tablespoon minced ginger

cup chicken broth
-
1/2 cup fresh lemon juice

cup scallions, cut 1" slice diagonally

Method:

Combine 1/2 cup cornstarch, 1/4 cup water and egg yolks; and
whisk until smooth. Coat each piece of chicken breast
evenly with the mixture

Heat the wok and vegetable oil over high heat until
sizzling.

Fry chicken breasts, part at a time on both sides until
brown and tender. Remove and place aside

In a saucepan, put 2 tablespoons cornstarch, brown sugar,
and ginger. Stir in 1/2 cup water and broth. Cook over
medium heat, stir until the sauce thickened and boiling.
Boil for 1 minute

Remove from heat, stir in lemon juice. Cut each chicken
breast into 4 pieces, place on a plate.

Pour sauce over the chicken, sprinkle with scallions. Ready
to serve
