Crispy Lemon Chicken Recipe

Ingredients:

  • 2 tablespoons and 1/2 cup cornstarch

  • 1 cup water

  • 2 egg yolks

  • 4 boneless, skinless chicken breasts

  • 2 cup vegetable oil

  • 3 tablespoons brown sugar

  • 1 tablespoon minced ginger

  • 1 cup chicken broth

  • 1/2 cup fresh lemon juice

  • 1 cup scallions, cut 1" slice diagonally

Method:

  1. Combine 1/2 cup cornstarch, 1/4 cup water and egg yolks; and whisk until smooth. Coat each piece  of chicken breast evenly with the mixture

  2. Heat the wok and vegetable oil over high heat until sizzling.

  3. Fry chicken breasts, part at a time on both sides until brown and tender. Remove and place aside

  4. In a saucepan, put 2 tablespoons cornstarch, brown sugar, and ginger. Stir in 1/2 cup water and broth. Cook over medium heat, stir until the sauce thickened and boiling. Boil for 1 minute

  5. Remove from heat, stir in lemon juice. Cut each chicken breast into 4 pieces, place on a plate.

  6. Pour sauce over the chicken, sprinkle with scallions. Ready to serve
