Chicken with Black Beans Recipe

Ingredients:

chicken or 3 chicken legs (about 1 1/3 lbs)

tablespoon soy sauce

tablespoon cooking wine or sherry

tablespoon cornstarch

1/4
teaspoon salt

Oil
for frying

chopped brown onion

1 1/2
tablespoons fermented black beans

tablespoon minced garlic clove

tablespoon soy sauce

teaspoon salt

Dash
of sesame oil

cup water

1/2
tablespoon cornstarch

1/2
bell pepper, diced

Method:

Cut
the chicken into bite size pieces, mix with 1/2 tablespoon soy
sauce, cooking wine, 1 tablespoon cornstarch and 1/4 teaspoon
salt and set aside for later use.

Heat
the wok then add oil; deep fry the chicken for 4 minutes, or
until golden brown and the meat is cooked. Remove and drain.
Remove the oil from the wok

Reheat the wok then add 3 tablespoons oil. Stir fry the brown
onion until fragrant. Add fermented black beans and minced
garlic; stir to mix

Add 1
tablespoon soy sauce, 1/4 teaspoon salt, sesame oil, 1/2 cup
water, 1/2 tablespoon cornstarch and chicken to wok, cook for 2
minutes or until the sauce has thickened

Add
bell pepper; stir to mix. Transfer to a serving dish and serve.
