Sesame Beef with Asparagus

Ingredients:

oz boneless beef shoulder, trimmed and frozen for 30 minutes
to 1 hour

1/2 teaspoon baking soda

cloves large garlic, crushed

tablespoons chopped garlic

egg white

1/4 teaspoon salt

tablespoon sesame seed
-

teaspoons sugar

1
teaspoon and 4 cups peanut oil

3/4 teaspoon cornstarch

tablespoons soy sauce
-
2
tablespoons dry sherry
-
2
teaspoons Chinese black vinegar or balsamic vinegar

2
teaspoons sesame oil
-
1
teaspoon Chinese sesame paste

1/4 lb asparagus, tips only
-
1
small red bell pepper, thinly sliced
-

dried red chili peppers
-
3
scallions, chopped
-
2
tablespoons chopped fresh ginger

Method:
-
Slice steak into thin strips. Combine with baking soda,
crushed garlic and 1/4 cup of cold water. Mix well and
marinade for 5 hours

Rinse steak and dry well. Mix egg white and salt, stir
vigorously until egg white foams. Stir in sesame seeds, 1
teaspoon sugar, 1 teaspoon peanut oil and cornstarch. Add
steak and toss to coat. Marinade for 30 minutes

Combine soy sauce, dry sherry, remaining sugar,
vinegar, sesame oil, and sesame paste, set aside

Heat the wok and 4 cups peanut oil over high heat. Deep fry
the beef for 45 seconds. Remove beef.

Deep fry the asparagus and red pepper for 30 seconds, remove
and set aside

Leave only 1 tablespoon oil. Add chili peppers, scallions,
chopped garlic and chopped ginger, stir fry for 1 minute.
Add in asparagus and red pepper, stir fry for 10 seconds and
add beef. Stir in soy sauce mixture in step 3, bring to boil

Ready to serve
