Ox Tail Cooked in Red Sauce Recipe

Ingredients:

  • 1 ox tail ( about 2 lbs)

  • 1/2 brown onion, cut into bite size pieces

  • 1 tomato, cut into bite size pieces

  • 1 teaspoon cornstarch dissolved in 1 tablespoon water

Ingredients A:

  • 3 tablespoons cooking wine or sherry

  • 2 tablespoons soy sauce

  • 1 tablespoon soy bean paste

  • 2 tablespoons ketchup

  • 1/2 tablespoon sugar

  • 2 cups water

Method:

  1. Wash the ox tail then cut into pieces at the joints. If desired, large pieces may be cut lengthwise. Place the pieces of ox tail in boiling water. Cook for 2 minutes. Remove and drain.

  2. Heat the wok then add 3 tablespoons oil. Stir fry the brown onions until fragrant. Add tomato and stir to mix.

  3. Add Ingredients A and pieces of ox tail. Bring to a boil; cover and turn heat to low. Cook for 1 1/2 to 2 hours, or until the meat is tender and the liquid is reduced to 1/2 cup.

  4. Add cornstarch mixture to thicken; stir. Transfer to a serving plate and serve

When cooking ox tail, stir occasionally to prevent burning. If the liquid has not reduced to 1/2 cup after 2 hours of cooking, turn the heat to high and stir until the liquid has reduced to 1/2 cup.
