Family Style Stir Fried Beef Recipe

Ingredients:

  • 1/2 lb beef tenderloin

  • 1/2 cup oil for frying

  • 1/2 cup shredded carrots

  • 1 1/2 cups shredded celery, cut into 2 inch pieces and shredded finely lengthwise

Ingredients A:

  • 1/2 tablespoon cooking wine or sherry

  • 1 tablespoon water

  • 3/4 tablespoon cornstarch

  • 3/4 tablespoon soy sauce

Ingredients B:

  • 2 green onions, cut into 4 pieces and shredded finely lengthwise

  • 5 garlic cloves, mashed

  • 1 tablespoon shredded ginger root

  • 2 hot red peppers, shredded

Ingredients C:

  • 1/2 tablespoon cooking wine or sherry

  • 1/2 tablespoon sugar

  • 1/2 tablespoon white vinegar

  • 1/2 tablespoon soy sauce

  • 1/4 teaspoon salt

  • 1 teaspoon cornstarch

  • 1 tablespoon water

Method:

  1. Shred the beef into 1/4 inch strips; mix with Ingredients A. Add 2 tablespoons oil and mix before stir frying. The shredded meat will separate easily during frying

  2. Heat the wok then add oil. Stir fry the shredded beef until it changes color; remove and drain (precooking). Remove the oil from the wok

  3. Reheat the wok then add 2 tablespoons oil. Stir fry Ingredients B until fragrant. Add the carrot and celery; stir fry them

  4. Return the meat to the wok; add Ingredients C. Turn the heat to high; stir and mix quickly. Transfer to a serving plate and serve
