Stuffed Chicken Wings Recipe

Ingredients:

  • 12 chicken wings

  • Dash of cooking wine or sherry

  • Dash of salt

  • 1 tablespoon cornstarch

  • 2/3 lb shelled shrimps

  • 1/2 oz pork fat

  • 1 teaspoon cooking wine or sherry

  • 1/2 teaspoon salt

  • 1 egg white

  • 1 tablespoon cornstarch

  • 1 tablespoon chopped roasted almonds or roasted peanuts

  • Oil for frying

Method:

  1. Cut off the tips of the chicken wings. Cut the skin on the top side of the wing and remove the bone through the thick end. Add dash of cooking wine, dash of salt and 1 tablespoon cornstarch and mix with the chicken wings

  2. Clean the shrimps and pat them dry. Finely chop the pork fat and shrimp together. Add 1 teaspoon cooking wine, 1/2 teaspoon salt, egg white, cornstarch and chopped peanuts/almonds and mix thoroughly (filling). Divide the filling into 12 portions

  3. Open the chicken wing to lie flat; place one portion of filling on the wing. Dip a spoon in water (to prevent filling from sticking); remove and smooth the surface of the filling. Sprinkle the filling with chopped almonds/peanuts

  4. Heat the wok then add oil. Deep fry the stuffed chicken wings over medium heat for 5 minutes, or until golden brown; remove and serve
