Stir Fry Shredded Pork with Eggs Recipe

Ingredients:

  • 5 eggs

  • Pinch of salt to taste

  • 1 tablespoon dry sherry

  • 1/4 cup lard

  • 1/2 lb pork tenderloin, shredded

  • 1 1/2 tablespoons soy sauce

  • 1/4 cup stock

Method:

  1. Beat the eggs with salt.

  2. Melt the lard in a pan, and stir fry pork until light browned

  3. Lower the heat and pour the eggs over the pork, stir fry gently until set

  4. Turn the omelet over and break it into small pieces

  5. Add the sherry, soy sauce and stock, cook for another 3 minutes

  6. Ready to serve
