Paper Wrapped Fried Chicken Recipe

Ingredients:

1/2
lb chicken meat, cut into thin slices

1/2
tablespoon cooking wine or sherry
-
1/2
tablespoon soy sauce
-
1/3
teaspoon salt
-
1
teaspoon sesame oil
-
Dash
of black pepper

Chinese pea pods
-

tablespoons shredded green onion
-

tablespoons shredded ginger root

inch square sheets cellophane paper

Oil
for frying

Method:
-
Mix
the chicken meat, cooking wine, soy sauce, salt and sesame oil
in a bowl
-
Place
a slice of chicken on a sheet of cellophane paper. Place 1
Chinese pea pod, a portion of shredded green onion, and ginger
root on top of the chicken. Wrap to form a rectangular packet.
Repeat until all packets are formed
-
Heat
the oil; fry the paper wrapped chicken over high heat for 2
minutes. When the packets rise to the surface, use a slotted
spoon to press them to the bottom of the wok to release any oil
that is inside the packets. Remove the packets to a serving
plate

Shredded black mushrooms and shredded hot red pepper may
be included in the paper wrapped chicken
