Fried Shrimp Balls Recipe

Method:

Rinse
and devein the shrimps; drain. Use the side of the blad of a
cleaver or a meat mallet to mash the shrimps. Chop the shrimp
finely. Separately chop the pork fat finely. Mix chopped shrimp,
pork fat and Ingredients A in a bowl. Throw the mixture lightly
against the inside of a mixing bowl to blend a smooth paste
(approximately 3 minutes)

Heat
the wok then add oil; turn off the heat after the oil is hot.
Take a portion of shrimp paste in palm of hand and squeeze hand
to a fist so that the paste is forced out of the space between
thumb and index finger.

Use a
spoon, dipped in water to remove the formed ball. Put the shrimp
ball in the oil. Repeat step 2 and 3 until all the mixture is
used.

Turn
on the heat to medium; deep fry the shrimp balls for about 3
minutes, or until they have expanded and are slightly golden
brown. Remove, drain and place on a serving plate. Serve with
Szechuan peppercorn salt.
