Fried Shrimp Balls Recipe

Ingredients:

  • 2/3 lbs raw shelled shrimp

  • 1 oz pork fat

  • Oil for frying

  • Dash of Szechuan peppercorn salt for dipping

Ingredients A:

  • 1/2 teaspoon salt

  • 1 teaspoon cooking wine or sherry

  • Dash of black pepper

  • 1/2 teaspoon sesame oil

  • 1 egg white

  • 1 tablespoon cornstarch

Method:

  1. Rinse and devein the shrimps; drain. Use the side of the blad of a cleaver or a meat mallet to mash the shrimps. Chop the shrimp finely. Separately chop the pork fat finely. Mix chopped shrimp, pork fat and Ingredients A in a bowl. Throw the mixture lightly against the inside of a mixing bowl to blend a smooth paste (approximately 3 minutes)

  2. Heat the wok then add oil; turn off the heat after the oil is hot. Take a portion of shrimp paste in palm of hand and squeeze hand to a fist so that the paste is forced out of the space between thumb and index finger.

  3. Use a spoon, dipped in water to remove the formed ball. Put the shrimp ball in the oil. Repeat step 2 and 3 until all the mixture is used.

  4. Turn on the heat to medium; deep fry the shrimp balls for about 3 minutes, or until they have expanded and are slightly golden brown. Remove, drain and place on a serving plate. Serve with Szechuan peppercorn salt.
