Fried Minced Squab Recipe

Ingredients:

squab (about 2/3 lb)

lb pork tenderloin

chicken livers, 1 oz chicken fat

Dash
of black pepper

1 egg
yolk

chopped Chinese black mushrooms

cup chopped brown onion

1/2
cup chopped bamboo shoot

1/2
cup chopped celery

tablespoons water

tablespoon soy sauce

teaspoon salt

1/2
teaspoon sugar

teaspoon cornstarch

Dash
of sesame oil

1/4
cup precooked green peas

1 oz
fried rice noodles

Method:

Bone
the squab. Minced the squab, pork, livers and chicken fat. Add
black pepper, and egg yolk and mix together.

Heat
wok then add 2 tablespoons oil. Stir fry the meat mixture until
all the liquid has evaporated. Move mixture aside; add onion,
mushrooms; stir fry until fragrant.

Add
bamboo shoots and celery; stir to mix. Return the meat to the
center of the wok; stir fry with other ingredients over high
heat.

Add
water, soy sauce, salt, sugar, cornstarch, sesame oil and green
peas; mix then remove.

Place
the fried noodles on a plate; spoon the minced squab on top of
the rice noodles. Lettuce leaves are used to wrap around the
meat and noodle mixture.

To
prepare rice noodles: Heat the wok then add oil. Heat the oil
until it is very hot. Turn off the heat, add dried rice noodles.
When the noodles rice to surface, turn them over. Fry the
noodles until both sides are light golden; remove.
