Method:

Shell
the shrimps, leave tail intact. Devein and rinse; drain. Mix the
shrimps with Ingredients A. Let stand until ready for use.

Mix
Ingredients B in the following manner; Mix flour and baking
powder together; add oil and water then mix to make a flour
batter. If mixture is too dry, add water (The batter should not
be runny)

Heat
the wok then add oil. Hold the shrimp by the tail and dip it
into the flour batter; put it in the oil. Repeat the step for
other shrimps. Deep fry the shrimps for 2 minutes or until they
are cooked and the skins are crispy. Remove and drain. Transfer
the shrimp to a serving plate. Serve with Szechuan peppercorn
salt or ketchup for dipping.
