Crunchy Coconut Shrimps Recipe

Ingredients:

  • 1 1/2 lb medium size shrimps

  • 1/2 cup flour

  • 1/2 teaspoon salt

  • 1/2 teaspoon dry mustard

  • 2 eggs

  • 2 tablespoons cream

  • 1 cup flaked coconut

  • 4 cups vegetable oil

  • 1/2 cup bread crumbs

Method:

  1. Combine flour, salt and dry mustard in one bowl

  2. Beat eggs and cream together in second bowl and set aside

  3. Combine bread crumbs and coconut flakes on a plate

  4. Shell and devein shrimps but leave the tails intact

  5. Dip the shrimps in flour mixture, then egg mixture and bread crumbs mixture to coat well. Do it for all the shrimps

  6. Heat wok and vegetable oil over high heat. Fry shrimps a few at a time until golden brown. Drain on paper towel

  7. Ready to serve. Serve well with Chinese mustard sauce, chili sauce or even ketchup
