Cold Chicken Appetizers with Hot Sauce Recipe

Ingredients:

  • 3 chicken legs (about 1 1/3 lbs)

  • 1 tablespoon sesame paste or peanut butter

  • 1 tablespoon sugar

  • 1 tablespoon white vinegar

  • 3 tablespoons soy sauce

  • 1 1/2 tablespoons chopped green onions

  • 1/2 tablespoon ginger root, mashed or chopped finely

  • 1/2 tablespoon garlic clove

  • 2 tablespoons hot pepper oil ("la yu" in Chinese)

  • 1 teaspoon presoftened, chopped peppercorns

Method:

  1. Boil water in a large pot. Put the chicken in the water; water to cover half of the chicken.

  2. Cook for 15 minutes. Remove the chicken; retain broth for other uses. When the chicken is cool, cut it into bite size pieces. Arrange on a serving plate

  3. Separately place all the ingredients in sequence order shown, in a bowl. Mis after each addition.

  4. Pour mixture on top of the chicken and serve
